Then if we talk about food, what food would you like to introduce or bring to the loved ones who waiting you home? Usually, people who live outside the city of Yogyakarta are more familiar with a food that is often bought to give to their loved ones, namely Bakpia.


Bakpia are baked flour rolls filled with green beans and sugar. Bakpia skin is made from a mixture of sugar and salt which is stirred in water until it dissolves and then formed into a dough by adding flour. The contents of Bakpia are green bean shards that have been soaked for several nights, washed, steamed for an hour, mashed and cooked with oil, salt, and sugar. The Bakpia skin dough is then filled with green beans in a round, flat shape and baked for at least 20 minutes.


1. History of Bakpia in Yogyakarta

Seeing its historical background, Bakpia actually comes from China. There, the cake is named "Tou Luk Pia" which means green bean pia (cake). The term Bakpia itself is derived from the Hokkian dialect Chinese (Hanzi: 肉餅), one of the Chinese language families, namely from the word "bak" which means meat and "pia" which means cake, which literally means bread filled with meat. In their home country, Bakpia is bigger in size than Bakpia Pathuk and contains processed meat, while Bakpia Pathuk contains Kumbu made of green beans.

However, according to other records, the Bakpia recipe was originally brought by a Chinese immigrant, namely Kwik Sun Kwok, in the 1940s. At that time, Kwik arrived in Yogyakarta and then rented a plot of land belonging to a local resident named Niti Gurnito in Suryowijayan Village, Gedongkiwo Village, Mantrijeron District, Yogyakarta. Kwik then tried his luck by making Bakpia, a typical of Chinese food.

 At first, he made Bakpia using the original recipe from China, which still uses elements from pork, namely pork oil for processing and pork as the contents of the Bakpia. However, after learning that the people of Yogyakarta are predominantly Muslim and do not eat pork or other pork products, Kwik then explored making Bakpia without using pork oil and pork. He replaced the Bakpia with green beans. To bake his Bakpia, Kwik always buys charcoal from his friend, Liem Bok Sing, a fellow overseas from China.


In fact, the taste of Kwik's Bakpia cake, which no longer uses elements from pork, matches the taste of the people of Yogyakarta. This modified new food is getting popular with many people. Gradually, Kwik, who originally was still renting land belonging to Niti Gurnito, finally moved to the west of Suryowijayan Village. In the new place he continued his work of making various kinds of food and bread, including Bakpia. In the 1960s, Kwik died and his business was continued by his son-in-law named Jumikem.

After Kwik's death, Niti Gurnito was also involved in making Bakpia. The effort made by Niti Gurnito is thought because Kwik once rented his land, so that Niti Gurnito was given the secret of the recipe for making Bakpia by Kwik. The Bakpia made by Niti Gurnito has its own peculiarities, namely its size is smaller than Kwik's Bakpia, has thick skin, and the contents are also smaller. This Bakpia is sold around the village using a wooden pole. At that time, buyers of Bakpia were still somewhat isolated because people of Chinese descent bought Bakpia from Chinese sellers, while Javanese people bought Bakpia made by Niti Gurnito.


2. Bakpia Pioneer in Yogyakarta, Bakpia Patuk 75


During the same period, Liem Bok Sing, a friend of Kwik's who originally supplied charcoal, also made Bakpia and sold it to the community. In 1948, Liem made a new recipe for Bakpia, then he moved from Pajeksan Village, Sosromenduran Village, Gedongtengen District, to Jalan Pathuk number 75 (now Jalan KS. Tubun), to be precise in Ngampilan, Gedongtengen Village, Ngampilan, which in the future developed into a large Bakpia industrial center named Bakpia Patuk 75 (slightly different from the name of the village). The name of the street where Liem's place of business is located is called Jalan Pathuk because at the eastern end of the north side is Pathuk Village, in addition to one part of Jalan Pathuk there is the Pathuk Police Dormitory and the Pathuk Market.


This is where Liem's Bakpia business is growing rapidly. With the new recipe, Liem succeeded in making a second-generation Bakpia with a thinner skin, flat tip, and slightly burnt filled with green beans. Previously, the early generations of Bakpia had thicker skin and round shape. Liem's Bakpia is increasingly popular with the people of Yogyakarta.

In the 1980s, Liem's Bakpia-making business grew rapidly. He has many employees, most of whom are villagers around Liem's place of business, namely Ngampilan, Sanggrahan, Ngadiwinatan, and Kampung Pathuk. However, some of the employees managed to "steal" the recipe and spread the method of making Bakpia to the villagers, even opening courses. Until finally the owner of Bakpia Patuk 75 also took Bakpia from there because of the high demand for tourists.

4. Closing


Apart from these seven places, there are actually a lot of other Bakpia from local sellers and of course the price is very different, for Bakpia without a brand it is usually priced at IDR 5,000 / 10 pcs, cheap isn't it. The taste is not much different from the others, it is equally delicious according to the author's experience, it's just that in terms of packaging it is less attractive because it only uses a transparent mica box, with no brand.
